book on Outlook 2007

I have an instructor who teaches an online 3 credit course in Microsoft
Outlook in our Office Technologies program.  She recently learned that
the publisher who published the textbook for Outlook version 2003 is not
going to publish a textbook for 2007 and has been unable to find any
textbooks for version 2007.  All she can find is reference books like
"Outlook for Dummies", etc.  While these books could possibly work, they
have no assessments, objectives, instructor manual, etc. and wouldn't be
very useful in helping her to put the course online.

If anyone has worked with an Office Technology instructor or knows of a
textbook for Office version 2007 would you please share that information
with me?  She needs something quite comprehensive, as the entire
semester is spent on Outlook.
